Soup for all Occasions

A couple of days ago, I was down with a nasty bug. I was feeling blue and came across Terry’s post πŸ‘‡

I immediately made some soothing soup using the below ingredients

Spinach β€” 1 cup
Carrots β€” 2 chopped
Celery β€” 2 stalks chopped
Olive oil β€” 1 tablespoon
Sea Salt β€” 1/2 teaspoon (or salt to taste)
Water β€” 1 cup

Optional (as I usually do not have the below)
Spices of choice
Onion
Coconut milk
Garlic
Butter instead of Olive oil

Boil carrots after sauteeing them in olive oil with salt. Once the carrots were half-soft, add the celery stalks and then spinach. Turn off the heat and let the spinach wilt by covering the soup pot with the lid. Ensure there is enough water so when you puree it, it will be of a soup consistency. You can also use the ingredients listed under optional and adjust them as you would enjoy them pureed. Additionally, you may substitute any of the optional ingredients with any of your favorite ingredients.

I pureed it in a blender. Then, I poured it into a bowl. Felt good after the lip-smacking delicious soup. I am very thankful to Terry Mansfield for his post, which spurred me into the act of preparing the soup and enjoying it.
